Michelin Star Chef Greg Malouf & Executive Chef Sonu Koitharaa, A Four Hands Collaboration

As part of the annual Dubai Food Festival, modern Middle Eastern Master Chef, Greg Malouf will join forces with Sonu Koithara, award-winning Executive Culinary Chef of Taj Exotica Resort & Spa, The Palm Dubai, to curate a culinary symphony which includes an exclusive four-course dining experience available on Friday, April 26th and Saturday, April 27th 2024.

Warm hospitality, familial sharing and artful cooking will be at the heart of this dining experience. On arrival with food and ethnicity as their medium, Australian Michelin-starred chef hailing from Lebanon and seasoned culinary maestro from India intend to narrate tales of rich cultural heritage infusing traditional Middle Eastern old recipes with new and enriching Mediterranean flavours. They have crafted an exquisite four-course menu, showcasing their mastery in creating a harmonious symphony of flavours.

Guests can anticipate an array of tantalizing dishes, each meticulously created to display a blend of tradition and innovation. With palate-teasing delights like marinated kalamata olives to Chef Malouf’s modern mezza creations, such as silky hummus with morel-shallot dressing, every bite will be a celebration of flavour and culinary craftsmanship.

Indulge in an exquisite selection of main course dishes, including Morocco’s celebrated B’stilla and Raia’s Turkish Adana Kebab, each bursting with distinctive flavours and textures. The culinary journey culminates with a choice of decadent desserts, leaving a lingering sweetness on the palate.

Malouf shared his anticipation, stating, “This is a storytelling of old world, new dreams. We’ll be referencing age-old recipes and using modern techniques to create something different, yet familiar for guests.” His culinary journey was deeply rooted in his Lebanese heritage, blossoming amidst the rich aromas and flavours of his mother’s kitchen in Melbourne. His authenticity, coupled with his dedication for simplicity and honesty of ingredients, has earned him acclaim both as a chef and an award-winning author of eight cookbooks.
