Guests at Eclipse will discover deeply satisfying Asian cuisine courtesy of Executive Sous Chef Christian Buenrostro. The talented Four Seasons veteran crafts every dish of the eclectic menu to be full of unique and exotic flavors that refresh and invigorate. His ocean-inspired classic, the poke bowl is one of such dishes with the freshest salmon and tuna. He recommends enjoying it poolside in a cabana to get the full sensory effect of the dish.
This season, Chef Christian made sure the new Eclipse dinner menu appeals to all. He has added salmon tataki (tuna belly with sriracha caviar) to the selection of appetizers along with the aromatic air bread wagyu beef pocket and his childhood favorite the charred sweet corn salad. Guests can choose from 11 various types of tempura, sashimi, maki and nigiri before delving into a hot selection of five carefully curated main dishes. Chef Christian firmly believes that his signature wagyu sirloin should always be included in the order when dining at Eclipse.
Sweet tooth guests are welcome to sample any of the seven various types of masterfully crafted desserts such as the best seller peanut caramel bar with homemade salted caramel, or the Japanese sticky rice cake mochi in six district flavours – all courtesy of Executive Pastry Chef Rasika Mahina.
Eclipse Terrace Lounge is open 8.00am until 2.00am. Ladies’ Night is on Thursdays from 7.00pm until 10.00pm, ladies can enjoy a plate of bites and two complimentary beverages.
