Chef’s Table At Roobaru – Dubai

Roobaru, located on Burj Khalifa Boulevard takes Indian cuisine to the next level with an elevated ten-course menu, curated from its very own fire pit. With the ultimate Chefs Table experience available every Monday for two seatings only, patrons can expect a new way to dine at Roobaru.

Available for vegetarians and non-vegetarians alike, specially selected items have been cooked to perfection adding character and flavour to the most unlikely of dishes. Begin with a refreshing Pandora Spritzer, spiced lemongrass with Kaffir lime and red pepper mixed to get the tastebuds tingling. Experience the delicious balance of sweetness and spice with the one-bite Jalapeño Sev Puri, served with spiced jalapeño yoghurt, green apple and sev, the perfect Indian snack. Savour the taste and crunch down on the Cured Seabass and Avocado Chaat with smashed avocado adding texture to the crisped papad.

Roobaru takes guests to the campfire, as they indulge in the Galli Ka Bhutta, a corn pudding with charred kernels and the smokey husk served atop the roasted corn. On to the next dish, tantalize the tastebuds with Siliguri Momo, a ginger chicken dumpling soaked in garlic and a chilli oil broth before refreshing the palate with the mouth-watering Nimbu Paani. This frozen pomegranate and lime delight is bursting with flavour, topped with black salt and a cheeky dash of chaat masala.

Ready for more? Cosy up to the Bottle Gourd Kofta, a tomato broth with pickled red onions and minced vegetable balls known as Lauki Kofta. Lovers of Roobaru must journey through each course and a delicious assortment of bread before arriving at the final course – one that all foodies have a second stomach for – dessert. Roobaru’s Mango Malai is a sweet worth waiting for. The tempting salted caramel-covered mango kulfi sits on a bed of malai whipped cream, textured with the perfect amount of crunchy homemade honeycomb.

Complete the meal with a cup of Haiyatea, a warm embrace of Darjeeling lavender and earl grey tea. Guests can be sure to leave satisfied, yet eager to discover more flavours of India through the eyes of Roobaru.
