Celebrating stories of history and the tinsel town, Paramount Hotel is the first-ever property by Paramount Pictures, located in Business Bay, Dubai. The hotel houses 823 rooms and suites over 69 floors, each floor with exclusive never seen before, behind-the-scenes photography from their movies. The hotel also features eight experiential dining concepts that celebrate the hotel’s Californian spirit in their menu.
The all-day dining concept The Stage will be serving an appetite of five cuisines at different stations that include grilled meats and seafood, a fresh bakery, Latin, Oriental and Mediterranean flavours.
Signature fine dining restaurant and bar Pacific Groove serves a market-style selection of grilled seafood, woodfired steaks, raw bar and fresh salads. Pacific Groove is set to be a popular outlet for Dubai residences, capturing the true essence of Californian cuisine.
Celebrating the best of Californian street-food is the laidback Malibu Deck trailer that features simple yet flavourful food to be enjoyed poolside.
Two unique concepts, the Screening Room brings the world of Hollywood to life with a private cinema that serves a Paramount take on gourmet cinema bites and beverages. The Cheat, a chocolate lab where Ezequiel, the hotel’s Producer Culinary, worked closely with the hotel’s pastry chef to create unconventional infused chocolates, based on the chef’s historic use of cocoa as a spice.
Premiering a true blockbuster, Paramount Hotel Dubai’s Producer Culinary, Ezequiel Cardozo, originally from Argentina, Ezequiel has worked in Spain, China, Mexico, Antigua and Barbuda, and Seychelles giving him the opportunity to learn some of the most celebrated cuisines.
A seasoned Chef with over a decade of experience, Ezequiel has been working with Paramount Hotel Dubai since the pre-opening phase. He is heading the culinary release of the Paramount Hotel Dubai and has created, designed and detailed concepts, menus and recipes for all the eight experiential dining venues in the hotel.
His style of food is inventive, experiential and intelligent as he plays on traditional recipes of different cuisines including Mexican, Spanish and Asian with progressive and modern industry knowledge and unconventional techniques. Fond of staging an experience, he is bringing to life an indulgent affair where the chefs work in show kitchens for the guests to watch and interact with.
Commenting on the hotel’s cuisine, Ezequiel says, “I have always been a fan of the Californian fusion and influence of the diverse regions of the Pacific Island and Mexico – all merged together into a healthier flavorful palette. Focused on locally-sourced and seasonal produce, we have added the true Cali flavors, freshness and trends with the help of our extraordinary culinary cast.”
