“My inspiration doesn’t just come from the ingredients, but I also love sifting through historical texts looking for interesting or long-lost variations of recipes. I love reviving traditional dishes and techniques while adding small modifications to make it more present for today’s palates. Our menu brings to life the rich history of Andalucía and its evolution from past to present, while bridging the influences of the Moors, and how they introduced various ingredients to Spain. This is highlighted in each of our dishes to celebrate this time and to tell the stories of our heritage.” said Bethany.
